Local restaurant attracts national attention

Salt to be featured on the History Channel’s "Modern Marvels"

AMELIA ISLAND, Fla. – November 25, 2008 – An award-winning local eatery, known for serving more than 30 varieties of salt from around the world, has attracted national attention with their unique culinary concept. Salt, the signature restaurant at The Ritz-Carlton, Amelia Island, will be featured in an upcoming installment of the History Channel’s "Modern Marvels." The original episode, an examination of the history of salt and its variety of present-day uses, is scheduled to air on Monday, December 1 at 8 p.m.

"This is an incredible opportunity to showcase the restaurant as a leader in the growing salt trend," said Richard Gras, Salt chef de cuisine. "We’re exploring cutting-edge methods in food preparation and presentation, and we’re just beginning to scratch the surface on the ways in which these salts can be used to enhance the dining experience."

The Salt concept was launched in 2006 as a modern update of The Grill, the resort’s long-running fine dining venue. According to Thomas Tolxdorf, Executive Chef for the resort, Salt has multiple meanings, referring to the restaurant’s barrier island location between the Atlantic Ocean and the intracoastal salt marshes, as well as to a particular culinary sensibility. "Salt is the fundamental seasoning. It changes everything it touches, enhancing flavor and enlivening the sense of taste," Tolxdorf said. "Today’s guests are more interested in food and wine than ever before, so we want dining at Salt to work the same way seasoning does, by revealing new things in everyday substances."
